These mini blender muffins are perfect for little hands. Great for babies and toddlers or to pack into lunch boxes.

One of the most popular recipes on Healthy Little Foodies is my Fruity Oat Breakfast Bites. They are easy to make, perfect as a handheld breakfast and great to pop into lunch boxes. Mini Blender Muffins are a similar idea but have blended oats to give a smoother, more muffin-like texture.

Muffins like these are perfect for getting kids involved in the kitchen. It is an easy recipe but has plenty for young kids to do. My youngest, Rory (2), loved peeling and breaking the banana, measuring the ingredients, tipping them into the blender, cracking the egg, switching on the blender and, of course, sampling the dates.
Above is a picture of him getting a little impatient as I try to photograph the muffins. He was eagerly pointing to each muffin in turn and saying "Rory's, Mummy's, Rory's, Mummy's, Rory's....)

Please note, this recipe only fills half a mini muffin tray. This is because it was all my blender will hold. I usually make two batches to fill a tray. If you have a large blender you may want to double the recipe.

Mini Blender Muffins
Ingredients
- 1 banana
- 80g (1 cup) oats
- 125g (½ cup) natural yoghurt
- 1 egg
- 1 teaspoon baking powder
- 20g (approx 3) dates
- 12 raspberries / blueberries to top (optional)
Instructions
- Pre heat oven to 180c / 350 f and lightly grease a mini muffin tray (this mixture fills 12 of a 24 mini muffin tray)
- Add all the ingredients to a blender (in the same order as the ingredient list) and blend until smooth.
- Fill each muffin tray insert, to the top, with the mixture.
- Top with a raspberry / blueberry or fruit of choice.
- Bake for 15 mins. Remove from oven and allow to cool before removing from the muffin tray

Hi Linda, you could try using coconut yogurt or replacing it with a mix of coconut oil and dairy free milk. However, without testing I can't guarantee results, sorry.

I’ve never baked with dates before. Are they dried or fresh? Do you have to chop them into little pieces so the blender can handle them? Thanks.

Hi Jess, fresh dates will work best. You can use dried though, just soak them in hot water for a couple of minutes to soften them. Once softened the blender should handle them no problem 🙂

The dates are there for sweetness so you could try raisins or some maple syrup. However, as I haven't tried it I can't guarantee results.

Just tried baking and it was a success! However to make it tastier for my 19 months old granddaughter, can I add some butter to the mixture? If so, how much should I add and when to add to the mixture? Thank you for the recipe and looking forward to your professional advice 🙂

Hi Sally, I would melt the butter before adding it to the blender. You may want to reduce the yogurt by the amount of butter you add. Hope it works for you 🙂

Is the oven set to 335 degrees or 350 degrees? I put it on 335 degrees. the cupcakes tasted really good. can't stop eating them and my son loved them.

Love this recipe, so healthy for kids and tasty! I also had problems with the baking time. Maybe it’s the silicone mini muffin tray? I had success with a 400 degree oven and about 20-25 minutes.

Hi Amanda, you put them in the blender. If they are very dry you can soak them in hot water to soften first.

Hi Risha, without trying a banana substitute I can't say for sure. I'd suggest apple puree/sauce but can't guarantee how they would turn out. Frozen fruit to top works great.
