Both my boys are big fans of pasta and given the choice I think they would eat it every day. They aren’t fussy about the shape or sauce that it is served with, they just want pasta! This avocado spinach spaghetti is one of their favourites. It is so creamy and really tasty topped with some parmesan cheese and chopped parsley. I’m a huge avocado fan so I make this sauce a lot! I also love it with courgetti (zucchini noodles), smothered on a chicken breast or used as a dip.
I often sub half the spaghetti with spiralized courgette noodles to up the boy’s vegetable intake. Finn eats them all at the same time, without really noticing, Rory will pick out all the spaghetti and eat that first. Only if he is still hungry will he eat the courgette noodles!
Avocado Spinach Spaghetti
- 250 g spaghetti
- 2 garlic cloves (finely chopped)
- 1 cup (40g) spinach
- flesh of one avocado
- 1/4 cup (60ml) olive oil
- 1/4 cup pasta water
- juice of half a lemon
- Cook the spaghetti to pack instructions.
- As spaghetti is cooking, put all remaining ingredients into a blender and blitz until smooth.
- Drain spaghetti and mix with sauce.
- Serve immediately.
Delicious served with grated parmesan cheese and chopped parsley.
