Halloween doesn't have to be all about the candy. This Frankenstein Smoothie Bowl is both fun and healthy!
As Halloween is approaching I decided to make a Frankenstein smoothie bowl for breakfast this week. I blended three frozen bananas with half a mango and a bag of spinach (160g.) Normally I would split the mixture into bowls and then add different fruit/ nut/ seed toppings like this pink smoothie bowl. Instead, I put the mixture in a glass jar, topped it with blueberries (for Frankenstein's hair) and used a marker to draw his face on the jar.
We love green smoothies and especially green smoothie bowls. They are a great way to add greens to your kids' diet without them really noticing. I find when I blend spinach with frozen banana that I can add so much more without it dominating the taste. Once the mixture starts to thaw you can taste it more but if your kids are anything like mine the mixture doesn't have too much time to melt! Add the spinach handfuls at a time and taste the mixture, you will know your kids' pallet best. You may need to start with a smaller amount of spinach and slowly increase the amount each time you make it.
I made this in my food processor as my blender is broken, it definitely works better in a high-speed blender.

Frankenstein Smoothie Bowl
Ingredients
- 160 g Spinach
- 3 Frozen banana
- ½ Mango
- Handful of Blueberries
Instructions
- Draw a scary Frankenstein face onto a jar
- Blend the banana, spinach and mango until smooth and combined.
- Pour the mixture into a jar and top with the blueberries

I don't quite understand the effect of frozen bananas - do you taste them more or less?
Do you just throw a bunch in the freezer or peel them first? Sorry if it's stupid question but would love to get my kids eating a bit more green. Mangos and bananas are top favourites here!

Hi Laura, I love using frozen bananas as I like the creamy, ice cream like texture they give. I peel bananas, slice them and then freeze. I always have a stash go them frozen in zip lock bags. I use them in a ton of things or to simply have as a snack. You can use frozen mango too if you have, I was just needing to use up a fresh one I had. This recipe is easily adapted to suit your tastes and also great with some greek yoghurt thrown in for a protein hit.
