With no baking powder and lots of mashed banana, these fritters are never going to be light and fluffy like pancakes-they're more like baked bananas: sweet, gooey, and delicious.

- Mash the Bananas - Use a fork to mash the bananas, leaving some lumps for added texture. You can also use a potato masher for speed or blend if you prefer a super smooth consistency.

- Banana Mixture - In a medium mixing bowl, mix the mashed bananas with the flour, cinnamon, and blueberries. The batter should be quite thick-thicker than pancake batter. Adjust the amount of flour if needed, depending on the size of your bananas.

- Cook - Heat a medium/large non-stick skillet / frying pan over medium-high heat and add oil. Reduce to medium heat and drop 1 spoonfuls of the batter to the pan. Fry until golden brown on the first side, about 1 to 2 minutes.

- Flip - Flip and fry for a further 1 to 2 minutes. Transfer to a plate and repeat with the remaining batter.

- Use a Non-Stick Pan: Since this recipe uses minimal oil, a non-stick frying pan is essential. If you prefer not to use non-stick, or if you find the fritters sticking, make sure to add enough oil to cover the bottom of the pan for shallow frying.
- Adjust Ingredients Based on Personal Preference: There's no exact ratio of bananas to flour, nor is there an "ideal" batter consistency. The amount of flour needed depends on the size and ripeness of the bananas (extra ripe bananas are more liquidy and may require more flour). Banana and Blueberry Fritters
Equipment
- 1 Non-stick frying pan / skillet
Ingredients
- 2 medium small ripe bananas
- ¼ cup - ½ cup all-purpose flour (plain flour) *buckwheat flour works as a gluten-free alternative.
- ¼ cup blueberries
- ⅛ teaspoon cinnamon ,optional
- 1 teaspoon coconut oil ,for frying
Instructions
- Mash bananas and then stir in the flour and cinnamon. Half the blueberries and stir through.
- Heat a medium/large non-stick frying pan over medium/high and add the coconut oil.
- Reduce to a medium heat and add tablespoon spoonfuls of the batter into the frying pan and flatten slightly.
- Fry until golden brown on the first side, about 1 to 2 minutes. Flip and fry for a further 1 to 2 minutes. Transfer to a plate and repeat with the remaining batter.

I had the same issue as others. I made half of them with 1/4 cup flour and they were total mush so I added a bit more flour on the last batch and they were a little better. Sounds like other flour alternatives might make the recipe better.

Yes the quantities are fine for us. I think it's personal taste though, we like the texture but some people might not. I also think the size of the bananas change the texture. I've made with both small and big bananas and they came out differently but both times I kept the flour the same 🙂

I've been looking for alternatives to porridge for breakfast as my 9 month old has decided he won't eat anything unless he can put it in his own mouth. I ground up some oats in the blender and used that instead if flour and it worked really well. I've made them with plain flour too, as well as wholemeal spelt flour. Works well with all of them but I needed more than the recipe called for across the board, otherwise the fritters were too wet and fell apart when flipped. My bananas must be bigger than yours! They also kept well in the fridge for a few days.
Great recipe though! Both my 9 month old and 3 year old love them!

My best tip is to make tablespoon sized fritters and wait until it is fully cooked underneath until you flip.

I just made them. They didn't even last to make it to the fridge. Haha. They were so good. I ate the rest myself! No problems in cooking them here. I did add a little more flour because of the previous comments. I made sure heat was high but I burnt the first ones so I did med heat and they came out great! It just like pancakes, you have to let the one side cook all the way first before you flip it. Thanks again for the recipe!

My only thoughts are that my bananas were not as ripe and maybe smaller. Although, I have made them several times using this recipe.

I just made this for my 8 month old daughter. The bananas were very soft so I had add a bit more flour, also added a little baby oat meal and altered the blueberries for chopped strawberries as that's what I had on hand. Turned out quite nice.

I made this. Are they supposed to mooshy inside. Also they were very sticky and could not turn them over without falling apart in oil

Hi Michelle, yes they are very moist and "mooshy" I've never had a problem turning them. I make sure the pan is really hot before adding spoons of the mixture. Maybe you could try adding a little more flour. Let me know if this works if you try them again. Thanks for commenting.

I just made these and they are great. With the flipping the first one I messed up but then i just put the tablespoon on there let it brown a minute then flipped and smashed and it was fine after that. Turned out perfect. I was wondering about nutritional value? It does not list potassium or any of that?

Hi Jackie, thanks for your feedback and so happy you liked them. I just use an online nutrition calculator to calculate a rough nutrition guide. You might be able to find one online that you can enter the ingredients into that will give all the info you are looking for.

I tried them i used olive oil butter to fry but i feel it did need more flour as mine were mooshy too! Type of pan helps too pancake type batter needs hot non stick pan i found them tasty a shame my kids didnt!
