I have been serving my my kids 2-ingredient BLW Banana Pancakes for many years now, and when a reader messaged me to say she tried the recipe with some crushed Weetabix added, I knew I had to share it.

Ingredient Information (and Alternative Suggestions)
- Banana: Ripe bananas work best; they are easier to mash and provide more sweetness.
- Egg
- Weetabix (Weetbix): If you are from a country that doesn't have Weetabix, you could try shredded wheat or blended oats as an alternative.
- Cinnamon: Added for flavour, you can skip or replace it with vanilla or cardamom.

- Step 1: Add the wheat biscuits to a blender or food processor and blitz until a fine crumb.
- Step 2: Mash the banana in a small mixing bowl.
- Step 3: Add the egg, Weetabix crumb and cinnamon and mix until combined well.
- Step 4: Fry for around 2 minutes on each side.
Tip: Depending on the stovetop, turn down to medium/low heat to ensure the batter cooks all the way through without burning.
Storage Instructions
- Refrigerate: Allow the Weetabix pancakes to cool, then store them in an airtight container in the refrigerator for up to 2 days.
- Freeze: Allow the pancakes to cool completely before freezing. To prevent them from sticking together, freeze them in a single layer on a baking sheet until solid, then transfer to a freezer bag for up to 2 months.
- Reheating: You can eat the pancakes cold or reheat them in the microwave for about a minute.

Weetabix Pancakes
Equipment
- 1 Non-stick Frying Pan
Ingredients
- 1 Weetabix biscuit (16g if using broken biscuits / crumbs)
- 1 banana
- 2 eggs
- ½ teaspoon cinnamon
Instructions
- Add the Weetabix to a blender or food processor and blitz until a fine crumb.
- Mash banana and add to medium mixing bowl, add the egg, Weetbix crumb and cinnamon and mix until combined well.
- Spray a non-stick fry pan with oil (or add a little butter or oil of choice) over medium heat. Add 1-2 tablespoons of the pancake batter to the pan to make one pancake, continue to fill the pan in a single layer, leaving enough side space to easily flip.
- Fry for around 2 minutes on each side, take care when flipping. Depending on the stove top, turn down to medium/low heat to ensure the batter cooks all the way through without burning.

a great idea but the ratios seem off.
the pancakes are great and loved by our littlest, however I'm not sure if our eggs are bigger than those in the recipe as one was more than enough and actually a little eggy in taste, next time will add a second bisk and a splash of milk

I think it depends on personal taste. I did test the recipe with an extra weetabix but my family preferred them with one. I make sure to use very ripe bananas and they don't taste eggy to us.
