- Blend: Add the kernels to a blender or food processor and blend until as smooth as possible. At least a couple of minutes. Add a little liquid to help it blend if needed (baby milk for babies, vegetable stock or cream for family side dish)

- Adjust texture (optional): Corn puree is textured due to skins. For a smoother puree, press it through a fine sieve in small batches, using the back of a spoon. (Can take a while!)

Corn Puree
Equipment
- High Speed Blender or Food Processor
Ingredients
- 3 cobs of sweet corn (about 500g / 1lb whole, or 250g /1¾ cups kernels)
Baby Puree
- 1-2 tablespoon breast milk, formula or baby-friendly vegetable stock (to thin.)
Side dish
- 1 small knob butter (or olive oil)
- 1-2 tablespoon vegetable/chicken stock (to thin)
- salt and black pepper, to taste
Instructions
- Husk the corn and pull off any silky threads.
- Add enough water to the bottom of a pan so that it does not rise above the steamer basket. Place a steaming basket, with the corn cobs in it, into the pot.
- Cover and heat on high. Once the steam builds, cook the corn until the kernels are tender, around 6 minutes.
- Stand the cob up on a plate or in a bowl and run the knife down and across the kernels, as deep as you can go
- Add kernels to a blender and blend until smooth, adding a little breast milk or formula for babies, or butter and tock for a family side dish. Pass through a sieve if a smoother texture is preferred.
