Slow Cooker Sausage Casserole

- 1 tablespoon Olive oil
- 1 onion ,finely chopped
- 1 celery stalk ,finely chopped
- 2 garlic cloves ,minced
- 8 good quality sausages ,we love pork or chicken
- 2 red bell peppers (capsicum)
- 2 carrots ,peeled and sliced
- 1 400g (14oz) can white beans ,rinsed and drained
- 1 400g (14oz) can chopped tomatoes
- 3 tablespoon tomato paste
- 2 teaspoon smoked paprika
- 1 chicken stock cube
Heat the olive oil in a frying pan over a medium heat. Add the onion, celery and garlic and fry for 5-10 mins, until softened. Transfer to the slow cooker.
Add the sausages to the same pan and cook for 5-10min, until browned all over. Transfer to the slow cooker.
Add all the other ingredients to the slow cooker. Pour ¼ cup of water to the empty tomato can, swirl to catch any remaining tomato, and add to the slow cooker. Stir everything together and place lid on.
Cook on high for 4-5 hours or low for 7-8 hours.
If your slow cooker has a browning function, you can do the frying steps directly in the slow cooker.
