Peach and Mango Salsa

- ½ red onion, finely diced
- 1 small red bell pepper (capsicum), seeded and finely diced
- 1 jalapeño pepper, seeded and finely diced
- 7 (approx. 125g) cherry tomatoes, seeded and finely chopped *
- ¼ cup cilantro (fresh coriander), finely chopped
- 3 ripe peaches, diced
- 1 medium ripe mango, diced
- 1 lime, juice of
- salt and black pepper, to taste*
In a large bowl, combine the chopped red onion, bell pepper, jalapeño, cilantro (coriander), tomatoes, mango, and peaches. Add the lime juice, toss well to mix, and season to taste with salt and pepper.
Let the salsa sit in the fridge for 5-10 minutes for the flavours to develop and blend together.
- For babies: Skip the jalapeño and salt, and finely chop all ingredients for a softer texture. (See FAQ section for more details.)
- Texture preference: For a chunkier, drier salsa, deseed the tomatoes and dice the mango and peaches larger. If you prefer a juicier salsa, keep the seeds and finely chop everything.
