Frozen Strawberry Yogurt Bites

Juicy strawberries mixed into creamy Greek yogurt, then dipped in chocolate and frozen.

Ingredients

  • 1½ Cups (225g) strawberries , chopped into pieces approx. ½ cm (¼ inch).
  • 1 cup (250g) Greek yogurt
  • ½ teaspoon vanilla extract
  • 1 tablespoon honey
  • 1 cup (190g) chocolate chips , see notes
  • 2 teaspoon coconut oil

Instructions

  • Lightly pat chopped strawberries dry, with paper towel, to remove excess moisture.
  • In a medium bowl, combine the diced strawberries, Greek yogurt, vanilla, and honey.
  • Spoon portions of the mixture onto a parchment paper lined baking sheet, about 1-2 tablespoons each. Or, fill ice-cube trays / mini ice-pole moulds with the mixture. Freeze for about 2 hours, until solid.
  • Once the clusters are frozen, combine the chocolate chips and coconut oil in a microwave-safe bowl. Microwave in 15- 30 second intervals, stirring after each, until fully melted.
  • Drizzle or dip each of the clusters / ice-poles one in the melted chocolate.
  • Return the chocolate-coated bites to the freezer until the chocolate has fully set.

Notes

Chocolate Amount: How much chocolate you need will depend on how thick you coat the clusters and how big your clusters are. I found 1.5 cups a good amount.
Fully Freeze the Clusters: Make sure your clusters are completely frozen before coating them in chocolate. This helps them keep their shape and prevents them from falling apart.
Chocolate Coating: If you’re dipping the clusters, the chocolate can thicken and will not be good for coating. To avoid this, you can drizzle the chocolate over the clusters instead of dipping. If you prefer to dip, keep the clusters frozen and remove them individually just before dipping. If the chocolate does thicken, add a little more coconut oil and microwave it in 15-second bursts as needed.
