Lightly pat chopped strawberries dry, with paper towel, to remove excess moisture.
In a medium bowl, combine the diced strawberries, Greek yogurt, vanilla, and honey.
Spoon portions of the mixture onto a parchment paper lined baking sheet, about 1-2 tablespoons each. Or, fill ice-cube trays / mini ice-pole moulds with the mixture. Freeze for about 2 hours, until solid.
Once the clusters are frozen, combine the chocolate chips and coconut oil in a microwave-safe bowl. Microwave in 15- 30 second intervals, stirring after each, until fully melted.
Drizzle or dip each of the clusters / ice-poles one in the melted chocolate.
Return the chocolate-coated bites to the freezer until the chocolate has fully set.
