Banana Bark

Layers of fresh banana, smooth peanut butter, and rich dark chocolate frozen together, creating an irresistible frozen snack.

Ingredients

  • 2 bananas ,sliced
  • ⅓ cup (95g) natural peanut butter
  • ½ cup (95g) dark chocolate chips
  • 1 teaspoon coconut oil

Instructions

  • Line a baking sheet, that fits in your freezer, with parchment paper. Arrange banana slices into rows, forming a rectangular shape. Place another sheet of parchment paper on top and gently press down with a cup or glass to flatten the banana slices slightly.
  • Spread the peanut butter evenly over the layer of bananas. Place in the freezer for about 20 minutes to firm up the bananas and peanut butter.
  • Add chocolate chips and coconut oil to a microwave-safe bowl, and microwave in 15 -30 second intervals, stirring after each round, until fully melted.
  • Once the peanut butter layer has set, drizzle the melted chocolate and spread it into an even layer. Pop the tray back into the freezer for an hour or until everything is fully hardened.
  • Break into approx. 8 pieces and enjoy straight away. Keep any leftovers frozen in an airtight container.
