Mini Christmas Puddings
Date and nut balls topped with white chocolate and dried cranberries.
Servings 10 balls
- 4 / 100g Medjool Dates, pitted
- 1 cup / 125g Mixed Nuts
- 1 tbsp Peanut Butter
- 1 tbsp Orange Zest
- 1 tsp Ground Cinnamon
- 1/2 tsp Ground Ginger
- 1/8 tsp Ground Cloves
- 1.7 / 50g White Chocolate
- 10 Dried Cranberries
Place the dates, nuts, orange zest and spices into a food processor and blend until the mixture is broken down into a sticky crumb
Using your hands, roll the mixture into tablespoon-sized balls. I made 10 balls from the mixture. Place in the refrigerator.
Melt the chocolate using either the microwave method or double boiler method (see notes)
Add a little chocolate to the top of each ball and allow it to drizzle down the edge of the balls.
Tear each cranberry into three pieces and roll into balls. Place on top of each ball.
