Mini Christmas Puddings

Date and nut balls topped with white chocolate and dried cranberries.

Equipment

  • Food Processor

Ingredients

  • 4 / 100g Medjool Dates, pitted
  • 1 cup / 125g Mixed Nuts
  • 1 tablespoon Peanut Butter
  • 1 tablespoon Orange Zest
  • 1 teaspoon Ground Cinnamon
  • ½ teaspoon Ground Ginger
  • teaspoon Ground Cloves
  • 1.7 / 50g White Chocolate
  • 10 Dried Cranberries

Instructions

  • Place the dates, nuts, orange zest and spices into a food processor and blend until the mixture is broken down into a sticky crumb
  • Using your hands, roll the mixture into tablespoon-sized balls. I made 10 balls from the mixture. Place in the refrigerator.
  • Melt the chocolate using either the microwave method or double boiler method  (see notes)
  • Add a little chocolate to the top of each ball and allow it to drizzle down the edge of the balls.
  • Tear each cranberry into three pieces and roll into balls. Place on top of each ball.
