Frozen Fruit Shaved Ice

Equipment

  • 1 Microplane grater Alternatively, you can use the fine grate section of a box grater or grater attachment on a food processor (results not quite as fluffy)

Ingredients

  • 150g (approx 1 cup) Frozen fruit of choice (melon, pineapple, mango, peach and strawberry all work great) For reference: Roughly 2 slices of melon/pineapple sticks or 1 cup of strawberries
  • ⅓ cup (80ml) Yogurt (optional)

Instructions

  • Prepare fruit and freeze overnight (Peel fruit such as peaches and mango and freeze whole. For fruit such as pineapple and melon, chop into large pieces)
  • Add yogurt to a bowl or jar (optional).
  • Using a microplane, or fine grater of choice, grate the frozen fruit on top of the yogurt (if using).
  • Serve straight away.

Notes

  • Stick to one fruit or mix and match for a mixed fruit delight. 
  • If you are looking for extra sweetness switch out the yogurt for ice cream or drizzle on top some condensed milk, maple syrup or honey (not suitable for under 1s).
