A refreshing salad with a perfect balance of sweetness from the watermelon, saltiness from the feta and freshness from the cucumber and mint.

Watermelon (cut into fingers and rind removed)

Lebanese Cucumbers (cut lengthways into quarters)

Instructions
Arrange the watermelon and cucumber on a serving dish. Crumble the feta on top and then the mint leaves.
To make the dressing squeeze the juice from the lemon into a small bowl, using your fingers to catch the pips.
Add the oil and whisk until combined. Season to taste.
