Child Dipping Avocado Fries into a Dip

Avocado Fries

Sliced avocado, coated in breadcrumbs and baked until crispy. These avocado fries are easy to make, taste delicious and are perfect for baby-led weaning.

Ingredients

  • 2 Avocados
  • ¼ cup (30g) Flour
  • 2 Eggs, beaten
  • 1 cup (55g) Panko Breadcrumbs
  • Olive oil spray

Instructions

  • Preheat oven to 200c / 400f / gas 6
  • Half the avocados, remove the stone and then slice each half lengthways, just to the skin, to form "fries". Use a large spoon to gently scoop out the slices. Alternately, you can peel back the skin of the avocado if you find that this would be easier. 
  • Put flour, egg and breadcrumbs in 3 separate dishes
  • Dip the avocado in the flour, followed by egg and then coat in breadcrumbs
  • Place on greased baking tray and lightly spray with oil
  • Bake for approx 15 mins (until crispy and golden brown)

Notes

  • Add some Flavour - Want to boost the flavour? Try seasoning the flour and/or breadcrumbs with a little garlic powder, chilli powder, smoked paprika or Cajun seasoning.
  • Breadcrumbs - You can use any breadcrumbs, I believe panko breadcrumbs produce the best result and I love the extra crush they provide.
  • Want a Darker Coating? - As this finger food is baked, and not fried, the coating isn't that dark golden brown colour that frying produces. If you have the extra time, you can pre-bake the breadcrumbs, before coating the avocado, to make them beautiful and golden
