Sweet Potato Christmas Bites

Sweet potato cut into fun Christmas shapes and baked.

Ingredients

  • 2 medium Sweet Potatoes scrubbed and cut into rounds approx. 1cm thick
  • 1 tablespoon Olive Oil
  • 1 teaspoon Smoked Paprika

Instructions

  • Pre heat oven to 200c / 400F / Gas 6
  • Using small Christmas cookie cutters, cut a shape out of the centre of each round.
  • In a large bowl gently toss both the rings and shapes in the olive oil.
  • Place the shapes and rings, not touching, onto baking sheets.
  • Sprinkle with the smoked paprika and cook for 20 mins (or until cooked through) turning once half way through the cooking time.
