Fish Tacos

Ingredients

  • 1/2 tsp smoked paprika
  • 1/2 tsp cumin
  • 1 tbsp oil
  • 4 (approx. 500g) firm white fish fillets (I used cod)
  • 4 - 8 corn tortillas (depending on how much you fill the taco
  • 1 cup of shredded cabbage a carrot mix
  • Sauce
  • 2 tbsp mayonaise
  • 4 tbsp natural greek yogurt
  • 1/2 tsp smoked paprika
  • Guacamole

Instructions

  • Mix the cumin and smoked paprika together and sprinkle onto the fish.
  • Heat the oil in the pan and cook the fish fillets for around 2 - 5 mins (depending on thickness) on both sides until cooked through.
  • Flake the fish.
  • Mix all the sauce ingredients together
  • Add some of the shredded carrot / cabbage mix to each taco, top with the fish and some sauce. Add guacamole and serve.

Why not get your child to assemble their own taco.
