Granola

Ingredients

  • 1 ripe banana
  • 2 cups rolled oats
  • 1/3 cup almond flakes
  • 2 tbsp sunflower seeds
  • 1 tsp cinnamon
  • 1/2 tsp ground ginger
  • 3 dried apricots chopped
  • 2 tbsp raisins

Instructions

  • Pre heat oven to 130C / 250f / gas 1/2 and line a baking tray with baking paper.
  • Mash a banana and mix in half a cup of oats at a time. Make sure the oats are thoroughly mixed into the puree.
  • Add almonds, sunflower seeds, cinnamon and ginger and mix well. Then tip the mixture onto the baking tray and spread evenly. Bake for 15 minutes, then mix in the remaining ingredients and bake for a further 10 - 15 minutes. Continually check that it isn't burning.
