Equipment

  • Non stick or well seasoned cast iron skillet

Ingredients

  • 1 Banana cut into 1.5cm (½ inch rounds)
  • 2 teaspoon Coconut Oil (or butter)
  • ¼ teaspoon Cinnamon

Instructions

  • Heat coconut oil, over medium heat, in a nonstick skillet. Once melted stir in the cinnamon.
  • Add the banana slices and fry for 3-4 minutes. Pay attention to the temperature, you want them to caramelise but not burn. You may need to adjust the temperature up and down as they cook.
  • Gently flip and cook on the other side for a further 3-4 minutes.

Notes

Using a non-stick skillet will reduce the amount of fat you need to use. Depending on the skillet you use, you may find that you need to add more coconut oil/butter.
