Today for lunch I made Turkey Egg Cups. They were easy to make, tasted delicious and were a big hit with Finn. I will definitely make them again for lunch and I think they will also make a great breakfast.
I started by wraping slices of turkey inside each muffin cup and then I simply cracked an egg into each turkey slice. I baked it in the oven (220c / 425f) for around 10 minutes for my husband and myself and around 17 minutes for Finn. It is advised to fully cook eggs for babies, toddlers and if you are pregnant to avoid food poisoning.
This recipe can easily be adapted. Try substituting the turkey for ham or adding some parmesan cheese on top. You could beat the egg mixture and add some finely diced pepper or some spinach. I also like a sprinkle of smoked paprika on top.
Turkey Egg Cups
- 3 slices of good quality turkey
- 3 eggs
- Pre heat oven to 220c / 425f / gas 7
- Wrap a slice of turkey into each muffin cup and crack an egg into each slice of turkey.
- Bake in oven for 10 - 17 minutes (depending on how well you want your egg done)
