Quinoa (pronounced keen-wah) is something I have been experimenting with a lot lately. It has a very mild flavour and is very versatile. This is the first time I tried it in burgers and it tasted really good.
I cut some rounds of wholemeal pitta bread and toasted them for the buns. I then filled them with the burger, chopped tomato and avocado.

Turkey, Quinoa and Apple Burgers
Ingredients
- 450 g Turkey Mince
- 1/4 cup quinoa (washed)
- 2 apples, grated
- 2 tsp dijon mustard
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
Instructions
- Bring to the boil 1/2 cup of water and add the quinoa. Simmer with the lid on for approx 15 mins (until the water has been absorbed). Allow to cool.
- In a large mixing bowl add all the ingredients and mix, with your hands, until combined. Be careful not to overwork the mixture.
- Form five burgers
- Fry on a medium heat. When the bottom 1/3 of the burger turns white flip and cook until the burger has no pink bits and the juices run clear. (Or until it reaches an internal temperature of 74c)

Would you mind clarifying when you say squesse the apples..i would like to make these but not 100percent on what to do. Thanks

Hi Aoife, wow you are really digging into the recipe archives! I just mean to squeeze the liquid out of the grated apples. Place the apples onto a clean dishcloth/cheese cloth and squeeze any excess liquid out. This is a very old recipe and one I haven’t made in years. I actually plan to edit / re work the recipe a bit and repost in the next week or so.

Made this, didn’t taste as am vegetarian but my partner did and said they were OK.14 month old seemed to have same opinion.

Has this been re worked? I am looking at making them today (just searched Turkey mince as I have some leftover and this came up and looks great)
