These Coconut Mango Oat Breakfast Bites are sure to be a hit with the kids. Make the night before for a super quick, on the go breakfast.

For a family that doesn't eat / like porridge for breakfast, we certainly manage to get through a lot of oats. For some reason, if oats are cooked in oatcakes a banana oat cookie, fruity oat muffin, rolled into blueberry breakfast balls or soaked overnight like these strawberry overnight oats, then my kids think they taste way better.
I'm happy enough with that as I think oats are a great start to the day. It is easy, however, when making breakfast in this way to add a ton of extra sugar. Cookies, oat bars and muffins are supposed to be sweet, right? This is fair enough when they are occasional treats but if you are serving them as breakfast then you are just starting the day on a sugar load. Not something I want.
So, if you are looking for something deliciously sweet then I wouldn't bother making these Coconut Mango Oat Breakfast Bites. That isn't what you are going to get. However, if you are looking for a different, yet healthy, way to serve oats in the morning then look no further.
Perhaps your kids are bored of porridge, maybe you are looking for something a little less messy, perhaps you are doing BLW (baby-led weaning) or maybe, like me, your kids haven't taken to porridge but you still want to serve them healthy oats in the morning. Whatever the reason I hope you enjoy these.

These Coconut Mango Oat Breakfast Bites do contain some raisins as I felt that it did need a little bit of extra sweetness. I do often leave them out though and the boys are happy enough to eat it. It's up to you if you add them. If you think your kids will need a little more sweetness then add a little more. You could even add some other dried fruit.
Soak the raisins while preparing the rest of the recipe. This stops them from burning as I have mentioned in this raspberry banana cookies recipe.

Has anyone tried this using up Ella’s pouches? I have left over mango ones and that’s how I’ve come across this recipe.
Amy says
Hi Kim, I think the mango puree would work great. I'd use have the amount puree and then add half the amount of mango pieces so there is a little texture and difference in the oatmeal bar.
Abbi says
Have you ever baked these as muffins? Do you think that would work well? Thanks.
Amy says
Hi Abbi, no I haven't but I have a very similar recipe that I make in mini muffin trays. Fruity Baked Oatmeal Cups. You could use the same cooking times 🙂
Ella says
I made this using baby cereal cause i dont want to throw them away. It turned out good baby likes it.
Amy says
A great way to use up baby cereal and you get all that fortified goodness too. Glad it worked 🙂
Angela says
Hi, can I substitute regular milk for the coconut milk?
Amy says
Hi Angela, I have made a similar recipe using almond milk which worked well. I'm sure regular milk would work too. Obviously, it won't have the same coconut-y taste. 🙂
Kevin Hulse says
Hi Amy I made these about two weeks ago. Would recommend making them again. Suppose you could add any fruit to them. Many Thanks and Kindnesses from Kevin
Amy says
Hi Kevin, Yes you can use many different fruits. I have a plum and almond version and these fruity oatmeal cups are similar too.
Kevin Hulse says
Yes I've made the plum and Along one as well the were delicious. Thankyou
Jane says
Mine turned out especially gooey. I’m not sure if this was user error or if that is how it’s meant to be? I’m reluctant to serve my daughter uncooked egg!
Amy says
Hi Jane, this is basically a hand held baked oatmeal (not like oat bars / flapjacks) so it is quite soft and moist. Did it look like mine? Was it easy to cut into squares? Did you use the same size tin as mine? Maybe it needed a few more mins in the oven?
Mica D says
I hope this is not a so dumb question, but is it necessary to use a mixer with this one? Hoping to make it for my 10mo old 🙂
Olivia says
I didn’t have raisins but I had some frozen raspberries so I made it with mango and raspberry. So good!! Like a tropical smoothie in a oatmeal bar.
Amy says
Sounds perfect, Olivia 🙂
Marie Winship says
What can I substitute egg with? I was thinking fax egg maybe!
Amy says
Hi Marie, flax should work but without trialling I can't say for sure how it would turn out, sorry.
Sonam Arora says
Hi Amy,
My 15 months old daughter loves your recipes! In this one can we replace or omit the egg? Thanks
Amy says
Thank you Sonam, without trying I can't say for sure - sorry. I'd try it with a flax or chia egg. Hope it works 🙂
