I first published the recipe for these Banana Blueberry Fritters back in 2014 but have now decided to update the post with some new photos and a slightly altered recipe.
Despite this having been a popular post on my blog, with many positive comments, I have also had some negative feedback. Many people felt the flour to banana ratio was wrong.
I think it really depends on the size of the bananas to how much flour you need. Personally, I find 1/4 cup of flour works well but I have increased this to 1/4 -1/2 cup following the feedback from readers.
I’d recommend trying a 1/4 cup first and adding more flour if needed.
I used plain flour in the original recipe but have updated it to buckwheat flour. I have started using this flour a lot more in my cooking and really like it.
Buckwheat flour is gluten-free and I get so many requests for gluten-free recipes. It is an acquired taste so feel free to use plain flour.
I love these banana blueberry fritters and often make them as a dessert when I have overripe bananas to use up. With only three ingredients they are super easy and quick to make.
A lot of sweet fritter recipes contain added sugar but I feel the bananas provide enough sweetness and when the blueberries burst open they add a further sweet hit.
They definitely help with my sweet cravings and I struggle to stop Finn & Rory eating them all in one sitting!

Banana and Blueberry Fritters
Ingredients
- 2 ripe bananas
- 1/4 - 1/2 cup buckwheat flour (or plain flour) *See note 1
- 1/4 cup blueberries
- pinch of cinnamon (optional)
- 1 tsp coconut oil for frying *See note 2
Instructions
- Mash bananas and then stir in the flour and cinnamon.
- Add the blueberries and stir through.
- Heat a non stick frying pan on high and add the coconut oil.
- Reduce to a medium heat and spoon 1 tbsp of batter into frying pan per fritter.
- Fry fritters until brown on both sides
- Remove fritters and allow to cool a little before serving.

I’m not sure what I did wrong but yours seemed to flip so easily in the video and I had to scrape mine off the bottom of the pan and it is a nonstick pan. They also didn’t brown they are just a gooey pile of banana. I’m worried they are not cooked through enough but not sure how to tell.

Hi Misha, thanks for your feedback. Were your bananas big? Perhaps you need a little more flour. You may also need to adjust the heat. How big did you make the fritters, you need to make them small to be able to flip (1 tbsp of the batter). Is your pan older? You may need a little more oil.

Hi Lana, sorry for the delay in getting back to you. You can freeze them – place on a baking tray until hard (around 2-3 hours) and then transfer to a freezer bag/container. You can reheat in the pan or microwave.

These are my son’s favourite food. I’ve made them 5 or 6 times now and every time he devours them in record speed. The first time I made them I added a lot more flour as per previous comments but my best results have been with the 1/4 cup stated in the recipe. I do think it’s totally dependent on how much banana you are using though but I’ve never needed to put a lot more in than that.
We also put a pan lid over the batch in the pan for about 30 seconds each side to get the fruit really gooey.
I think we’ll be enjoying these for a long time to come. Thanks for a great recipe.

Hi! I want to love this recipe but unfortunately the first batch hasn’t gone so well! Maybe it’s because I’m a first time fritter maker!
If possible, might be great to add some photos along the way! I’d love to see what the consistency looks like when you are adding them to the pan.
Mine were much too mushy and would not cook even with the right amount of oil and a non-stick pan. I did add more flour and that helped a little bit still nothing like the end result you achieved- I’ll see how the next batch turns out!
Any additional tips would be great!

Update! I went ahead a made them with chopped blackberries and they came out great! There were some mishaps. The first 4 were perfect and then the second batch burned. I just peeled off the burnt parts, added more oil to the pan, turned down the heat and tried again. It worked out well! My 2 year old and I devoured them in minutes.

Super easy and yummy recipe! Made it for my 9 month old using oat flour, yet my 4 year old and I were the ones to eat it. Needed a lot more flour than what the recipe called for, but super yummy. Love the taste the coconut oil adds. Will definitely make again!

My 1 year old can’t have raw banana, and for the most part hates breakfast. However she is luckily at least able to eat cooked banana and loves this recipe. The amount of flour needed seems to change each time I make these, I’m sure that has to do with the size/ripeness of the bananas using at the time. I start with the 1/4cup then add 1/8 of cup as needed. I also added some unsweetened shredded coconut to the batter, as I don’t have coconut oil, to still get a little coconut flavor. And instead of using oil, I used a little unsalted butter in the pan (very little as my pan is a great non stick pan). Thank you so much for this recipe!!

I tried this recipe with whatever ingredients I had in pantry – all purpose whole grain flour and coconut flour mixed, frozen blueberries, ripe bananas, and coconut oil.
The result was very flavorful, and my 4 YO really liked it. My 15 MO could not wait and a few spoonfuls of the batter… haha.
I use a gas stove, and heat control seems quite important. The fritters easily burn.

Hi Faith, yes you can use sunflower oil. I like the flavour coconut oil gives but they will still work with other oils.

Hi Millie, if using coconut flour I’d say you would need a lot more liquid. I’d try adding an egg and a little more milk. However, without trying I can’t give a guarantee of how it would work. Is it for allergy reasons you wanted to use coconut flour? Buckwheat flour is gluten-free and works well.

I normally don’t comment on food blogs but I have to say, I did look at other people’s suggestions (put more flour, use nonstick baking pan) and it was AMAZING! No sticking or mess from the bananas. I eyeballed the flour and made sure it wasn’t not a runny consistency before I dropped then in the pan in spoonfuls.

I just tried these today and it turned out good. My Little One also liked it. Which is the best part! I tried it with wheat flour and regular oil, tasted good. Very sweet and moist. Also felt good about serving them. At first 1/3 cup of flour was not enough I had to add just a bit more till I noticed the texture was thicker, stickier. Waited till dark brown to turn, had minor small fixable incidents in turning them. Thank you!

Loved them! My 8 month-old went crazy for them. I only had strawberries in the house but they worked fine. I always use homemade ghee to fry food, and I used a non stick pan. The first batch was a bit mushy and a bit hard to flip, but still good. I added more flour for the second one and they were more pancake like. I really love these!! I made them once before with regular flour and they turned out perfect but I have recently gone gluten free. So I switched up the recipe and used almond flour and it was still pretty mushy when trying to flip (even using 1/2 cup) so I added 1/4 cup gf rolled oats and they turned out WONDERFUL!

My 8 month old loved these, and so did I! I altered the recipe slightly to include an egg since I wanted these to be more of a breakfast for her rather than a snack. I used 2 bananas, 1 egg and 1/2 cup flour and got a great pancake-like batter. I used strawberries instead of blueberries because that’s what I had in the fridge. I fried them up in a hot non-stick pan with coconut oil and they turned out perfect! No problem flipping them. I burned 1 batch but that’s just me. I can’t make pancakes or grilled cheese without burning at least one…

I love banana pancakes! I tried these and had trouble as many of the other commenters. They were burning on the bottom and not cooking at all in the middle, so I couldn’t get them flipped. But then I remembered something I had tried with another banana pancake recipe, and decided to try it with these, and it totally worked! So instead of doing them on the stove, I baked them in the oven. I preheated my cast iron while mixing the batter, and then lightly greased it with coconut oil. I made each fritter only 1TBSP worth of batter, and spread it out thinly. Then I baked them at 350 degrees for about 8-10 minutes, before flipping them and baking for another 5. They are perfect! I made these today for my 9 month old baby and myself for breakfast! He loved them and so did I! I used 2 medium bananas and 3/4 cup of wholewheat flour, I didn’t use any oil on my non stick pan, and had no issues flipping them. I like that they are a bit mushy in the middle, good for my guy with no teeth. I will definitely be making these again, experimenting with different flours and maybe different fruit. I love when I can make things for both me and my baby to eat, it makes life easier and keeps me eating healthy. Still have a few left over for his snack tomorrow.

First, these are delicious! After reading the comments, I think there are a few key factors on how successful the batch will be. One, the size and ripeness of your banana and two, ensuring your pan is hot.
My bananas were about medium sized and about 3 days away from being the perfect ripeness for banana bread. when I added the 1/4 cup of flour, I noticed that the batter was not the right consistency (tad too runny) So I opted to add about 1/8 cup of baby oatmeal.
They were perfect. Easy to flip and the right consistency for my 11 month old.

They’re great! My daughter and I loved these! I have to admit I probably used a lot more flour than the recommended… I was using gluten free flour and it always needs a completely different amount than normal flour, so I just added flour until the batter looked battery. I made these very small, just a tablespoon of batter for each.

Hi! I just wanted to comment on your recipe :). I tried them this morning for my little ones and I did not have any issues! Mushed the bananas to a paste. I used a little more than 1/4 cup of unbleached flour, even added in some strawberries. And they were delicious!
If anyone is having trouble with sticking to the pan…. I used a good non stick pan with a tablespoon of coconut oil on medium heat. I would add more coconut oil when needed. Also, if the fritters were browning too fast, just turn down the heat a little so the middle can have more time to cook before you flip them.

Well, these were a huge hit! I used Bob’s Red Mill All-purpose flour and actually started with 1/2 c. I just made these for my 8 month old. We are following the blw approach and had already tried a two ingredient “pancake” with banana and egg. I had two very ripe, large bananas and used half a cup of plain white flour. Most of them worked well, I think it is very much dependent on the amount of coconut oil used and the heat of the pan. We found out my 9 month old has a severe egg allergy that was completely unexpected. This was one of the recipes we tried to see how she would like them plus the ease. She absolutely LOVES them. She will eat 2 or 3 with every meal if I let her. We keep them in the fridge and they lasted just fine for a week. We have frozen them with no issues either. We did have a slight issue with sticking, but that made no difference to her. The one thing I noticed is they seemed to be very oily, but we used palm oil because we didn’t have coconut oil on hand.
I was just wondering if anyone had tried other fruits with these? She loves most berries so I wasn’t sure how they would do.

These are excellent! I just made 2 batches because my kids and husband devoured them before I could wrap them up for this week’s lunches!
I see a lot of people have issues flipping and with texture. I did not measure the ingredients but rather went by consistency of the batter. I went for thicker – almost muffin mix texture. I added a little flax and chia for a protien boost and cardamom because, well, I love the flavor along with cinnamon.
I seared them on high a minute and turned it down to medium to cook the middle. I had zero issues with sticking. There are fantastic. I will incorporate them into my repitore often. They would even work as a dessert!

I kinda winged it while using this recipe. I used I small banana and almost 1/4 cup of buckwheat flour. Didn’t stick to the pan at all and held together perfectly. Just saw this recipe. It looks great! I have children with autism. We have been a gluten free family for a long time. Though I haven’t tried this recipe yet, an all time favorite of my children is bananna pancakes. Having worked with gluten free batters over the years, when bananas are mixed in, if the banana is too, ripe it makes flipping very difficult! So if you are using GF flour, try using bananas that are not too over ripe. I bet flipping will no longer be a problem!

My little girl LOVED these!! She refused to nap, so I tried out this recipe instead and the whole time all I heard her say was, “mmm”! I had no problem flipping them at all. I did heat the pan on High with coconut oil while I made the mix. Then turned it down to Medium heat just before adding Tablespoons of the batter. I did notice if there is too much coconut oil pooled anywhere in the pan, it can make it difficult to flip but other than that, if the coconut oil is distributed throughout the pan, there should be no problem flipping. I’ve had the same issue as everyone else.. the mix wasn’t batter-like at all (more like a mush).. and they fall apart when I try to flip them. Hi Kirstie, a 1/4 cup flour is approx 85g (3oz) However this isn’t an exact recipe as banana sizes can differ. I have had a lot of feedback from people saying that they had to add more flour and others have said it has been fine. I’d try adding approx 1/4 cup and try flipping one and if you like the texture great but if not keep adding a tablespoon of flour at a time.

I tried these and used coconut flour. I had trouble flipping them too without them falling apart. I use a tiny frying pan that’s only about 3 inches wide. The mixture wasn’t of batter texture but mushy. Regardless of this my 14 month old scoffed them lol

Yes the quantities are fine for us. I think it’s personal taste though, we like the texture but some people might not. I also think the size of the bananas change the texture. I’ve made with both small and big bananas and they came out differently but both times I kept the flour the same 🙂

I’ve been looking for alternatives to porridge for breakfast as my 9 month old has decided he won’t eat anything unless he can put it in his own mouth. I ground up some oats in the blender and used that instead if flour and it worked really well. I’ve made them with plain flour too, as well as wholemeal spelt flour. Works well with all of them but I needed more than the recipe called for across the board, otherwise the fritters were too wet and fell apart when flipped. My bananas must be bigger than yours! They also kept well in the fridge for a few days.
Great recipe though! Both my 9 month old and 3 year old love them!

Thanks for the feedback, Amanda. I love the idea of using oat flour and will def try that next time. I made these again last week and found the flour measurements worked well. I wanted to check as I have had a lot of feedback saying that they needed more flour. Can I ask how much more flour you needed to use? I’m thinking of adding a note to the recipe.

I think I used roughly 1.5 times what the recipe said. I’m measuring less now that I know what consistency works well.
They were delicious with oat flour!!

I made these exactly as the recipe called for except substituted coconut flour for regular flour and they turned out perfectly. I sprayed the pan really well with coconut oil spray and let it get really hot. Thank you!

Hi Michelle, I’d have to make them again and time myself to give an accurate time. I go by feel, I hate until the bottom is fully cooked before I flip. Perhaps a couple of mins?

Hi lovey, made these this morning and they were delicious! I used wholemeal buckwheat flour instead of plain, just a little less than a 1/4 cup. They turned out perfectly, thanks for such a great easy recipe!

Hi Lyndsey, Thank you for your feedback. I’m sorry it hasn’t worked for you. I have had quite a few comments like this now so I am going to look at the recipe again and see where I can alter it. My best tip is to make tablespoon sized fritters and wait until it is fully cooked underneath until you flip.

I just made them. They didn’t even last to make it to the fridge. Haha. They were so good. I ate the rest myself! No problems in cooking them here. I did add a little more flour because of the previous comments. I made sure heat was high but I burnt the first ones so I did med heat and they came out great! It just like pancakes, you have to let the one side cook all the way first before you flip it. Thanks again for the recipe!

Same issue, made them as small as possible and no way I was able to turn them. Bummer. I added more flour and that seemed to help.

Hi Darlene, sorry that the measurements don’t seem to be working for you. I perhaps need to look at the recipe again as a few people have commented on this. I’m glad that adding more flour helped. My only thoughts are that my bananas were not as ripe and maybe smaller. Although, I have made them several times using this recipe.

Same problem here, couldn’t flip over. I think the banana is caramelizing in the oil making it near impossible to flip over. Bummer!

Hi Adrienne, I’m sorry the recipe didn’t work for you. I’ve never had an issue with them. I make small bite size fritters and they have always flipped. What size are you making them? Maybe try adding a little more flour?

I just made this for my 8 month old daughter. The bananas were very soft so I had add a bit more flour, also added a little baby oat meal and altered the blueberries for chopped strawberries as that’s what I had on hand. Turned out quite nice.

Hi Michelle, yes they are very moist and “mooshy” I’ve never had a problem turning them. I make sure the pan is really hot before adding spoons of the mixture. Maybe you could try adding a little more flour. Let me know if this works if you try them again. Thanks for commenting.

I just made these and they are great. With the flipping the first one I messed up but then i just put the tablespoon on there let it brown a minute then flipped and smashed and it was fine after that. Turned out perfect. I was wondering about nutritional value? It does not list potassium or any of that?

Hi Jackie, thanks for your feedback and so happy you liked them. I just use an online nutrition calculator to calculate a rough nutrition guide. You might be able to find one online that you can enter the ingredients into that will give all the info you are looking for.

I tried them i used olive oil butter to fry but i feel it did need more flour as mine were mooshy too! Type of pan helps too pancake type batter needs hot non stick pan i found them tasty a shame my kids didnt!
